Cooking with coconut oil: raw chocolate almond bars

While this can sometimes seem easier said than done, here is a fantastic recipe to get that chocolate fix without sacrificing nutritional value. So, when you are craving a delicious and nutritious paleo treat, try these phenomenal Raw Chocolate Almond Bars.

Ingredients

For the cookie

  • ½ cup + 4 tablespoons agave
  • 6 tablespoons maple syrup
  • 3 teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 1½ teaspoon salt
  • 8-10 cups raw almonds, coarsely ground

For the chocolate

  • 1½ teaspoon salt
  • 4 tablespoons vanilla extract
  • 1 cup agave
  • 1 cup honey
  • 3 cup cocoa powder
  • 2 cups + 2 tablespoons Skinny Coconut Oil

Directions

  1. To make the crave-worthy cookie portion of the Raw Chocolate Almond Bars, mix the first five ingredients.
  2. Immediately pour the wet mixture into the ground almonds, and mix thoroughly.
  3. Divide the mixture into halves. Press each half into 8-by-10 inch pre-sprayed pans, and set them aside.
  4. After you have pressed the cookie portion of the Raw Chocolate Almond Bars into two individual pans, make the chocolate portion by combining all the ingredients for the chocolate portion.
  5. Divide the chocolate mixture in half, and then pour the chocolate over each cookie portion.
  6. Freeze immediately. For best results, give this delicious treat a few hours to fully set and harden before enjoying with friends, family, or as a not-so-guilty pleasure!
